Description

Headed by Shinobu Namae and located on a nondescript backstreet next to a temple in Nishi-Azabu, this quiet and underrated gem is headed by an alumnus of both Michel Bras’ Toya, in Hokkaido, and Heston Blumenthal’s Fat Duck. 

 

Namae is entirely dedicated to his trusted local suppliers, and has a knack for bold, unexpected flavor pairings that combine faultless classical French techniques with premium Japanese produce — the sous-vide foie gras with a subdued passion fruit puree, seared guinea fowl with lotus root and sansho pepper, and slow-roasted Japanese turnip served on a blistering hot slate of volcanic granite are all impeccable — and the desserts are particularly playful (shaved persimmon with white miso ice cream and Sauternes jelly). – Darryl Jingwen Wee
